our roots

Dave, Niall and Paul, all chefs, worked together over 20 years ago. We then went on to work independently in many other restaurants in Ireland and around the world. In 2012, after a visit to Copenhagen’s 'MAD food symposium' (founded by the acclaimed chef Rene Redzepi of NOMA) we were inspired to start a food collective. As the idea of Nádúr developed, we decided to follow a wild food path, and use our cooking experience and plant knowledge, to share, explore and teach. We have hosted wild food walks, pop up dinners, workshops, lectures in schools, clubs and Universities and worked with different groups within our community. 

Through years of  exploration we have realised that education is key, teaching is our passion. We want to share our wild food knowledge with you.
